If you want a skillet that'll last a lifetime, this is probably it. It sears like a proper steakhouse pan, bakes incredible cornbread, and can go from the stove to the grill to a campfire without a second thought. The Lodge 12-inch is still the one to beat for the price. Now, it's heavy—we're talking about 8 pounds—and it does ask for a little looking after. And that silicone handle holder it comes with? It’s only for the stovetop, not the oven. But here's the thing: once you get the hang of it—preheat it right, don't mess with your food too much, keep it seasoned—it pays you back. You get amazing browning, it holds heat like a champ, and it's the kind of pan you pass down, not throw away.

We really put this pan through its paces. More than 10 different cooks—ribeyes, smash burgers, skillet pizza, cornbread, you name it. Even eggs. After a good 5-minute preheat on medium, the sear was just fantastic. It didn't cool down much at all when we threw a cold steak on it, which is classic cast iron. The surface felt a little pebbly right out of the box, but believe it or not, it smoothed out a lot after just a few cooks and seasonings. Eggs started sliding around much better. It was a total workhorse in the oven and on the grill, too—no warping, no weird hot spots. Cleanup wasn't a big deal: hot water, maybe a quick scrub, and then dry it completely before wiping on a tiny bit of oil. Just remember, that silicone handle is a great little bonus for the stovetop, but please don't put it in the oven. Grab a real oven mitt for that.

So, are there any trade-offs? Yep, a couple. The weight and the handle are the big ones. At about 8 pounds empty, you're not flipping anything with one hand. The handle is just a straight piece of iron that gets hot, and it doesn't give you a ton of leverage. You'll definitely be using that little helper handle for two-handed moves. It also needs that bit of routine care to keep it seasoned and rust-free. If you're someone who just wants to rinse a pan and throw it in the rack, or you need something super light, you might be happier with carbon steel or a good stainless steel pan. But if you want that incredible, deep heat and a pan that'll literally last forever without a crazy price tag? The Lodge is just a fantastic deal.
